I finally have ruled out a few boats at least. No go on the Pro Air. Forget the Supra, just too massive. The 99 Sport Nautique is at the top of the list so far. I will just have to retrofit an automatic ballast to eliminate the hassle of pumping and hoses.
Anyone out there have any knowlage of Ski Centurion Air Warriors? Big V drives worry me.

If you really want a V-Drive that can ski you should consider a 211, they are the best, but that will also cost you a lot more money, as far as centurions go my brother used to work at the dealer and said the best one was the Avalanche. I have ridden behind a Air Warrior once, but never ski. I wasn't impressed with the boat, in fact they sold it and bought a Super Air 210 Yellow_Flash_Colorz:

I own an '01 Sport and can't say enough great things about it. Not sure about your local water conditions, but I grew up with and frequently ride MC & Malibu, IMHO believe the Sport (and probably CC in general) handle rough water better than the competition. It may take longer, but if you can spend some time behind the wheel of each, it won't take long to experience the differences of each manufacturer. I think you'll be surprised at the variances in craftsmanship. Great pic and enjoy the new boat, whatever you choose.

If as you said you are coming from an i/o boat I think you'd like a v drive more. The layout is closer to what you are use to, more space, and more storage to be found around the boat. I have a Super Sport and love it. We've had it 10 years now with no complaints, from the way dealers treat you, to the quality of the boat it's just top notch. Plus as was mentioned above they handle rough water quite well, so many "ski" boats tend to swamp under larger waves it makes them scary to be out in on some days. I have had 2-3 rollers coming through and the boat handled it like a champ, not saying I wasn't worried but it came through fine.
