Also, I owned an old style 210 for 5 years, the new 210 for this whole year and I ride behind a 2000 x-star all of the time as well because my buddy has one. We run/ran all of them with 2500+ lbs of ballast and I would say the old 210 has the steepest wake, the new 210 has the second steepest and the x-star is the third steepest, although I will say that all three have fairly steep wakes compared to other boats on the market.
The new 210 IMO can definitely get the biggest and then the old 210 and x-star are around the same size. The one thing I notice between my new 210 and my buddies x-star is that I feel like we have to drive a lot faster to make the wake clean behind the x-star (and yes, we weight it about evenly front to back). Also, for some reason I am more comfortable riding at 80' behind my boat and 75' behind the x-star, even though the x-star is a narrower boat. Hope this helps...
