The seating would be one of the main changes. The 07 has the hump in the rear seat like the 220 08 and up has the wrap around I believe. I am not sure about much else.
The 07 was the first year of the "new hull". It will have the hump that many did not like. The crest graphic started in 08. I think 08 was also the first year for the FCT2 (Titan) tower option. I like the 08, but you should be able to get a much better deal on the 07
If you're thinking ahead to resale, the '08 and newer will sell for more money. That being said, you might be able to find a good deal on an '07 if you're willing to deal with the less-desirable deck design.

Jeff - You bring up a good point, I really like the 08 but the 07 seems to be easier on the budget and if you take it a step further - I have read some people desire the older 03 - 06 hull over the newer hull. - I see you have enjoyed both - How do you compare the 03 210 to the new 07 and newer 210 wake?

I loved my 2003 210. It was a great boat, and I owned it for over four years. Since then, I have had a 236, a 230 and a new 210. I can honestly say that the newer 210 is an easier boat to own overall. It throws a great wake. Mine pulled a number of pros last year, and they all loved the way I had the wake set up. The wake is slightly more rampy (and less vert) than the older 210, but there is no trough, so that makes up for it in my book. Add to that the wider beam and the better interior layout, and the newer 210 wins, at least for me.

One other thing that I think was different is that in the 2007 210's, the center ballast was one straight ballast tank that filled the ski locker. In the 2008's and up, they changed it to a "U" shaped tank so it didn't take up any room in the ski locker. If you're like me and put a bunch of weight in your boat, this is nice because you can now add another sac in the ski locker.
I have owned both the older style 210 and now own a 2008 210. I was very hesitant about getting the new boat mainly because I loved the abrupt kick of the older style 210 and was afraid I was not going to like the new style wake. I can honestly say I like my new wake a lot more than the old style. If you weight it right, it is still one of the steaper wakes on the market, but as Jeff mentioned above, doesn't have the trough like the old wake did. The new wake can get so big too and still not wash over. And obviously, the new interiors are so much more bigger and plush than the older interiors with a ton of different seating options. Definitely get the newer 210 if you can swing it.
