I've written before about this after having my first experience wakeboarding behind a SN 200 (2011 model with tower). I've since had the chance to play around with various set-ups and wanted to share my experience so that current and future owners can bebefit.
So I've thrown two large fatsacs in the back - 750# each, but not filled to capacity. Both were laid out across, one on the floor between the back seat ant the motor box, and the other one laid out on the back seat.
While there wasn't much space left to move around in the boat, the wakeboard wake was amazing - and I'm an experienced rider who has riden behind many different boats including a 210, 211, X-2 and wakesetter (XTi, mind you). At 21 MPH or so, 70' rope, (light) wife and one 13 y.o. on the boat. Very solid wake, nice ramp, landing zone a little narrow so watch out for those flats.
With the exact same setup, we then took some surfing sets. No need to move the sacs to one side, only ask the passengers to move to the surfer's side. And I should mention that we tried both starboard and port surfing and it was great.
So overall I'm very happy with this boat. It is THE hardcore ski machine. With a little sadness when I bought this baybee I thought that I had also made the choice to give up wakeboarding. But now, Orthopaedic Surgeons rejoice, I'm very excitd to be able to continue to enjoy wakeboarding while still have the ultimate machine to progress in my skiing skills.
