I've just recently passed the 500 hour mark...I unfortunately do not have the manual for the boat. Can anyone provide a quick rundown of what needs to be taken care of at this point?
Not sure that there is a 500 hour check list but do your normal oil change and transmission fluid change, inspect the belts, make sure the impeller is still pumping water and that is about it. If there isn't anything out of the ordinary, I wouldn't worry too much about it.
when is the last time that you changed them? Usually, I don't do anything unless I have problems but others are concerned and they change them. If you want to, pull one out and see how it looks. If you decide to replace them, then do so.
so no need to worry about spark plugs or anything else?
I change spark plugs, impeller, and fuel filter at the start of each season. All fluids are changed at the end of each season (and at recommended intervals during season). Attached is the PCM Maintenance Recommendations Chart. You might have to click on it to expand the image so that it can be read. The site will probably try to auto-resize the image.
