I would use the kneeboard over stepping off a ski. The step off is a bit tricky. You have to push your foot on the water way forward and it feels a bit unnatural. It helps to learn with both feet first then pick up a foot and ride one footed before trying the step off.
I'll toss out another barefoot idea. Take an old ski and turn the bindings around. Leave the heel cup off. Get up on the ski and ride about 20 mph and pop up, turn and grab the handle with both hands. Now the ski is forward and you are backwards. The next step in the trick is a big one...
This post has me stoked. I'm going to pull the old kneeboard out this weekend, do a couple backrolls, unbuckle my knees and foot away. I'm not as flexible as I used to be so the hardest part will be the transfer from the knee to sitting position.
