I have a 200 CB and I have been footing behind it for about a year. The boom is key IMO, I have done the knee board thing but you will fall more. Also a good footing suit is key as well, until you get good, buy for padding and not style. You can still bruise through a decent footing suit if it is a advanced suit.
Divide you weight by 10 and add 15 mph for the boom and deep water. I am 6-7 250 and I foot at 40 mph, and do not need to go any faster.

It also depends on the water. If you have glass 35 should be good. I have a friend who is a really good footer and he is 180, and I pull him at 35, but when he starts to do tricks we bump it to 38.
The biggest variable is how you are getting your reading. I am using zero off, but as you know most marine gauges are not really that close. Bottom line go the speed you need, but i think people learning often start too fast.

To stop the bounce scoot forward on the board but also keep your feet on the front of the board while riding and getting outside the wake and it will not bounce. Sounds like you found the right speed for that. Once outside the wake place your feet lightly on the water then have the boat accelerate. In this three point position with your feet on the water you will not bounce at all. Just take your time getting up while the boat gets to speed.
Once you master the kneeboard and begin deep water starts you will find that riding on your butt is almost the same as on the board.

Good to see your on a 210 lucky7t, it's probably the best barefoot boat currently in CC's line up. The stepped hulls on the 200 is great for skiing but can leave the table frothy, which at 40mph feels like a gravel road that hasn't been graded all year (took a few faceplants before i was prepared for it). The 210's have a smooth table for wake crossing and very small wakes at footin speed. The only down side, finding a boom that will go on the newer 2-point towers since you don't have a center pylon.
And since you have a 210, your max speed is only 40-42 anyway, so speed control isn't all that necessary (and it gives your wife one less thing to worry about).
