Which options do you all think are essential, must have, nice to have, etc?

Must haves... NSS, Ballast pumps and belly tank (no rear tanks, plumb sacs instead), zero-off, heater (if in a state where riding can be cold) and board racks. Nice to have... tower speakers, sub, underwater lights, bimini, 450hp ,

I'm a novice to an extent. The 210 2014 will be my second nautique. Make sure u get the linc with zero off, not that paddle setting. I would gave bought floor model but it didn't have the Z off. I went without extra ballast. I want to plumb a little bigger bags. It looks awesome! Good luck!2014 SAN 210 TE

After having a heater I would get one again on any future boats. It makes for more work winterizing and is another failure point but keeping the wife warm allowing for early/late season riding to happen in the first place makes it worth while to me.
The NSS is a great option if you surf at all and even if you don't not having it might make resale a bit harder if thats a concern.
I also added a transom shower but thats not a factory option any longer so you would have to add that yourself.
I have the Z5 cargo bimini which I wouldn't hesitate to recommend so long as you don't need to fold your tower down for storage as its a pain to remove and stow frequently. The 210 doesn't have a ton of storage so being able to get a couple surf boards and a 5th wakeboard or skate up out of the way makes for a much more pleasant day if you have that many people on board.
I wouldn't waste the money on the factory sub in a 210 since they are mounted in the side of the boat next to the driver seat and the sub they chose really doesn't like to be used that way and the only option to use the hole is to replace it with something that works in that location in which case you might not have enough power from the factory amp you already paid for and unless they change it in the last 2 years the wiring is undersized. The same thing holds true for the factory tower speakers, if you give them enough power (which the factory amp does not) then they can sound pretty good but if you have a competent shop to work with and don't mind waiting on the install (thats the hard part) after delivery I bet you get a better outcome and depending on your choices you could be pocketing some savings as well.
The factory extra ballast gets you a nice cover on top of the bag where you could put... well not much really but they do reinforce the dividers for you. If you are thinking about extra ballast for my money skip the piggy back bags and pull the hard tank and put in a 750 or 1100 as it doesn't make the gauges any less accurate than they already are and you actually gain storage space and it makes working on the motor a cinch.

From what I understand, the re-done 210 has some different options to make it more of a "price point" boat since the G21 and G23 are the new kid on the block.
My 2013 is loaded up pretty good. If you can stretch it, I'd get as many options as you can, they are all really nice to have.
I know the debate continues on motors, but I'm super happy I bought the 409hp motor. There have been many times when I'm loaded down with crew and gear that it's been an advantage.
