did I see something about an add on (over factory ballast) option now being offered in the new 210s? Any descriptions of how this is plumbed, plus photos out there?

The new hard tanks are L-shaped and go up the side of the hull. The fat sac then is mounted inside the L and is anchored to the tank. They come with drop in storage tubs for the rear hatches, so you don't forget that you stored a ton of gear in that locker and blow the hatch off when you completely fill the system.

Its a 300lb fly high sac on top of the hard tank on each side. The 230 had something special in the vent line I didn't see on the 210 but I didn't try to pull the bag out of the 210 to see how it was plumbed with the factory rep watching over my shoulder but it looked to my like a better option would be to just get the normal ballast and order the piggy back kit with the 400's from wakemakers or else pull the hard tanks and put 750's or 1100's in there. The plastic tray they put on top of the pro ballast was sturdier than you might think since it says no-step, but it doesn't really leave a lot of storage. There is a picture on the Nautique site on the 210 page of the empty sac in the with the cover out. I know a couple of people have asked for better pictures but I havent seen anything yet.

I haven't seen or heard of anyone trying 1100's on the 2014 yet, but even if it doesn't expand fully at the bottom it certainly will fill to take up all the available space. The new 2014's have a bigger hard tanks expanding the stock capacity and I haven't seen what the locker looks like empty, but hard tanks don't make full use of all the available space out of necessity as they have to be installed/removed. If you put a piggyback tank on top it does fill up some of that side gaps but the size and placement is never perfect.
I can say from experience in my 2012 210 that the factory tanks (supposedly 278ish?) with a 400 on top leaves less usable space than a 750 and when its not full there is a ton of room. If I was planning on needing 2 full 1100's all the time I would probably look at the G21 instead. The only downside as pzthk6 pointed out you have to pay attention to what you have stored in there when you fill the sac, it wastes time emptying the tank so someone can get a life jacket out.
