Star Gazer Perfect Pass in 2001 GT40 without stock MPH or RPM (hours)

I am about to install my Star Gazer Perfect Pass this weekend. And I have a question (or two) for anyone that his done this on a GT40 2001 with the stock Speedo and Tack replaced.

My current Hours read 95ish hours(tack), when I got the boat 3 years ago, the dealership told me that boat had 350 hours on it (35 hours on tack replaced at 315).

Should I set the hours to 0.00, or match the current hours (95), or try to match what the dealership told me was on the boat when I got it…. ( 315 plus the current hours of 95 setting it to 410)?

Also, I am guessing that I need 3 wires behind the dash…
    RPM Gray
Power Purple (should this be going to the replacement Speedo and Tack?)
    Ground Black…

Since my the pickup for current MPH is on a CRAPY place (thanks Omaha marine) I will not be keeping the MPH gauge because it only works at 27 PLUS or with FULL Ballast or 4 or 5 guys in the boat.
SO I should be able to use the Power and Ground from it, and use the 3.5 hole in the dash.

Any tips and input would be great.
