It's a brand new boat, so in my mind like 15 min. More than that and I'd get unreasonable.
But I'm probably not the best to ask.

Boat was there today Friday (8:30 am), told me Thursday for delivery. Now they are saying Tuesday after I complained. What all is involved in predelivery? Looks like add a couple batteries, put on board racks, Bimini and swim platform. Am I missing something?
I agree with Charles and hopefully that includes a water test. I've had same day delivery, but typically less than a week. It depends on how busy the service deptartment is and how many new boats came in.
Lead time and how long the prep takes are two different things. Prep may take 4-6 hours but what you're really asking is how soon should a dealership have staff available to get to your boat. I'd imagine that varies greatly dealer to dealer and the time of year.
I understand being impatient, but my guess is it takes what it takes. They have an interest in getting it out the door as quickly as possible. Proper set up, adn delivering a clean rig should be the most important concern.
First, manufacturers generally give an estimated date of completion. Then once its completed, sometimes they get delayed at factory due to back-ordered parts or QC.
Then, the boat gets shipped. Depending on how far you are from the factory, there are variables there as well such as travel delays.
Once it gets to your dealership, then they will try to squeeze the boat into the service schedule to get prepped and out the door to you.
Prep - 4-7 hours. Remove wrap, install bimini, platform, mirror, board racks, batteries, update electronics, Every boat can be different. Regardless of manufacturer, some items may not come ready to go out to the customer (like properly tuned amps, tower speakers, etc).
Water test - 1 hour depending on travel time. This should be done before delivery to ensure everything works as it should.
Detail - 1-2 hours. Boats don't come perfect from the factory.
Then finally they can meet you for delivery.
There are a lot of variables that are out of your dealerships control.
wakerider has it right. Though i am sure there are dealers out there who can rush a boat through, it takes time to do it right and set up and dial that new boat in correctly.
Shaft is in. Prop does have to be installed though.
