My favorite setup as well. People think bigger is better but it's just not true. It's often more technique and skill. Look at any pro wakesurf contest vid they do every trick in the book (and invent some) with a stock wake.
It's impossible to say you'll ever get a G23 wave on a 210 (massive difference in displacement) but you can get a perfectly serviceable fun wave for sure. The key is even distribution of weight including the bow. Bow weight is what opens up the pocket of the wave and elongates is. Stern weight makes the wave steeper and shorter.
We also go to Lake Chelan - every July and the water is truly BLUE as in the picture - awesome place. Kids have grown up around this lake. If you are every in WA you gotta check it out.
