I just got a 2012 SANTE 210 and I’m wondering what ballast to get and what size of prop. Where should I order from? I want to have the best and biggest wake I can possibly have.

I am pretty happy with a 1579 Acme prop . Extra 400 lbs bags on top of the rear tanks and the arrow shaped under deck bag in the front . All are plumbed in to the original ballast system . Add a Suck gate and your in business. All bags are from Wakemakers.

I'm running an Acme 1759 (left rotation) version of the 1758 (right rotation), these are 13.5" Dia. with 14.25" Pitch. and .105" cup (the 1617 is 14" Dia. with 13.75" Pitch and .105" cup). We wakeboard and wakeskate, we run full factory ballast w/ 750's piggybacked in the rear and 280 pounds of steel shot bags in the ski locker. We normally have 1-2 Adults and 2 teen boys on board so I like the shot bags over a bow piggyback bag as it allows you to move the weight around a little to dial in a cleaner wake. We use the Pop 40lbs bags and I like that style as they are easy to place and pull in and out of the ski locker. That said I'd like to have a couple of the LeadWake bags for placement around cockpit area of the boat as they would hold placement better on the floor.
Although I have not experienced it understand that the 1759/1758 may cavitate when loaded heavy, I think we run lightweight crew likely why it's not been an issue for us. I intend to add a couple of FatBrick ballast bags (2x150) that can be worked in when light on crew or looking for a little extra wake, when I do that I'll likely switch to the Acme 1617 and use my 1759 as a spare.

From your original post if you want biggest wake potential get the 1617. This is the largest diameter prop you can use without risk of gel burn.
If you want to risk gel burn get the 1235 or another 14.5 inch diameter prop with similar pitch. It will out perform 1617 slightly , but you might or might not get gel issues down the road.

1617 prop for sure.
750# piggybacked off each rear tank or 1100s if you remove tanks
370# tube sac tied into belly tank in the locker overflowing to 650# integrated bow sac
200# lead in the nose
300# lead under surf side seats if light crew
This is a surf set up. For WB we usually go 50-75% rear and maybe half up front
