They look like sound dampening panels but not nearly enough of them to do anything so yeah I'd go with some type of projection screen. I'll be down there in a month and a half and wouldnt' mind a tour at all.

My money is on identification for each work station.

Like: Interior, drivetrain, electrical, etc...

If they are computerized, they could even be a production schedule. What boat, where, how long, etc...
