My dealer always asks me when I want the boat. Actually, I'm on my fourth so they know I don't want it until mid-April. I let them schedule in boats ahead of me for people that want them in January through March. It works out well for all of us. I ordered my current one last August and it's due at my dealer on April 11.

It depends on build slot availability more than when you order the boat. Depends what the dealer has available and is willing to give you.
Dealers have to get their stock boats in to have inventory for boat shows, plus most people don't need a boat in January, so pre-sold boats get pushed back.

TigerDog......yeah...that's a pretty quick turn-around. November to January. I didn't mind waiting a little extra on mine since it was winter.....even in Texas. We had Icetopia while my boat was being built in 2021. LOL.

Each dealer gets x amount of slots for x model boats; when you get a boat depends on dealer slot availability for that model of boat. If timing is important you should specifically and directly discuss the dealer's slot availability before you plunk down a deposit. If they have sold their slots for the year it might take a long, long time to get your boat.

The boats roll in on a semi; how many depends on the models loaded, but this is generally correct. Truck availability can be an issue if there is a shortage of drivers or whatever. It is also possible that a shortage of a specific part like a tower might slow things up. But the big limiting factor is still slot availability. But once a boat gets built they will find a way to get it to the dealer.
