I was wondering how good the surf wave is behind a 2019 G23?

This depends upon what you are looking for and if you properly weight the boat. When I first began competing a very experienced surfer once told me that the best wave is "the one you are use to". He had a point because most people don't spend significant time behind different boats to acclimate to the wave to have an informed opinion. If it doesn't feel good right away they say the wave is bad. We have over 1100 hours behind the 2016 - 2020 G23s as well as hundreds of hours behind Centurion Fi and Ri, Supra and Supreme boats. In general the Centurion wave is very loved by skim riders. I believe this is because it is more of a swell than a well defined wave with a lip. For surf style it is less familiar especially for getting airs when coming from a boat like the Nautique or Supra which have very well defined lips. It's not that you can't air behind a Centurion but it takes some time to adapt for surf style. I have pro surfer friends with Centurion and Supreme boats, we spent a good bit of time behind them and won world championships and dozens of competitions behind these boats so I have nothing bad to say about the wave, it's just different from the Nautique wave. However, Centurion Skim riders very often don't care for the 2016 to 2020 Nautique wave because it has a "hole" as they say due to a more defined trough compared to Centurion or Supra. There is also the perception that the Centurion wave is "longer" than a Nautique wave. I believe this is nonsense. While a Centurion surfer does typically surf further back from the boat, its because the wave sets up further back behind the boat. If you try to surf up to the platform, there is very high pressure zone that you will fall into because the surf system tabs create a trough that it very difficult to surf out of. So one has to surf further back on a Centurion wave. On a Nautique one can and will regularly surf right up to the platform and not fall because the wave is surf-able for the entire length. In my opinion the usable length of both waves is virtually the same.
That said, the newer hull, 2021 - 2024 G boats provide what I believe to be the best wave I have ever surfed when properly set up. Because the new hull eliminates the hole and leaves a very well defined lip with a much greater volume wave. Of course, as my wise competitor friend said, it is also the boat I am most use to...
