you can learn without a barefoot suit, but if you want to do any tricks and still keep your lunch get one. you will have it for a long time. barefootcentral.com has the raptor suits for $180. great way to start.
I would also recommend a boom; I am old school as well. learned off a kneeboard with a shorty and a lifejacket. actually that's not true. my first time I was taught by pros on a boom, using my shorty and a drysuit over top for ease of movement. I was taught how to tumble up and got up my first time.
I didn't have a boom so we used a kneeboard. It is by far the easiest and best way if you don't have a barefoot suit or a boom.
I wouldn't recommend a step off. you will hurt yourself before you get it... anyone who's ever barefooted knows that 1 foots are a difficult thing to master for a beginner... well, you have to 1 foot before you can 2foot ski when you step off.
so sit on the kneeboard with your feel dangling. find the sweet spot on it so it doesn't sink. then when you are ready say "go" and lift your feet up and you can even put them on the tip of the board.
you will want a decent pull up because they do bounce. once the boat has planed 3-5seconds.... put your feet on the water in the 3 point stance (look it up) and slowly stand up. you're footing now.
