I just did my 05 over the last 1.5 years. Its a lot of work, but well worth it. Hit me up if you have any questions on things. I have probably done most of what you are going to need to do.
Congratz!!

Yeah, kind of dropped that one in there like nothing happened. That changes the entire conversation about any troubles the boat has. Hopefully it was fresh water. I bet there's going to be some electrical issues along the way as well......

Well best of luck.
My first project and first boat I personally owned was a 19' Sea Ray that sank at the dock, mainly out of neglect. No bilge pump, no cover, couple good storms over a weekend and no one checking on the boat. Mine didn't have a happy ending but hopefully yours will.
The biggest obstacle on mine was fuel or more precisely water in the fuel. I couldn't remove the tank so we pumped it as best we could and then spent hours/days trying to get dirt and water out of the system. After getting the engine to run reliably on muffs for 20 - 30 minutes at a time we took it out to the river where it idled well but would stall when you tried to get in on plane as we were still pulling water from the tank under higher fuel loads. This lead to other fuel system issues while trying to clear the water separator which caused a leak then a fire. Not a good day on the water.
Based on my experience I would suggest removing the tank if possible, dumping the contents then performing some serious cleaning/decontamination or complete replacement of the tank. Maybe a bit over the top but after all these years the event has still left an impression on me. My advise would be to be extremely careful and safe when rebuilding the fuel system on a boat that's sunk before.

Sounds like you and NautiqueJeff should get in contact. Unless my memory is wrong, he's got a cracked block Excalibur 330 engine sitting at his place (or soon will). I'd bet all the electronic bits and harness from his engine might just be the ticket you need if you run into problems.
