On my 2000 SAN the V Drive oil pressure light never comes on at all. Should I worry about getting this fixed or just as long as I service it regularly not worry about it? How much would it cost to fix if I decided to just fix it?

Maybe it is just the dash light burned out. I do not know whether it is a lamp or LED or whatever, but you could try removing the dash pod and checking it out.
Or, it could be a stuck pressure switch (stuck "on"), but to me, this scenario seems unlikely. To test, just disconnect one wire from the sending unit...the light should then stay on.
Finally, with the ignition on, you should have voltage at the light terminals/connections.
