2002 SANTE Replacing Steering Cable and/or rudder packing

I just recently purchased a black on black SANTE and the steering when i test drove it was extremely stiff, almost need 2 hands to turn when going about 23mph. I was planning on replacing the steering cable but not too sure where to start. If anyone could give some detailed instructions and about re-packing the rudder housing with grease? I'm planning on replacing the cable with a OEM cable so I dont loose any steering movement.

I had the same exact problem as you stated with my 2001 AN...took two hands. Replaced the steering cable and now one finger to turn.
