Does anyone know where I can get a wiring diagram for a 2004 Excalibur showing the wiring to the ECM and injectors ?

what is the problem with the boat?

I am converting the boat to run on lpg and gas and need to undertand where to switch off the injectors when switching to lpg.

Could always just remove the injector relays from the wiring harness at the top of the engine. Otherwise look at the manuals here on PlanetNautique.
