Here's some info on my latest project: 16" wheels with 235/80R16 Load Range E tires on a 2004 210 with a single axle Ramlin trailer.
My trailer still had the original tires on it from the previous owner. While they appear to be in good shape, we've got a big trip planned and I don't trust 8+ year old tires. Additionally, they appeared to be maxed out even with max air pressure in them, so it seemed like a good time to get some extra load capacity. I considered going with the same size (225/75-15) load range E tire, but they are only rated for 300lbs more weight than the D rated tire. Also, the fact that I didn't care for the chromed steel wheels (they don't match the truck!) made it that much easier to spend some money on new 16" wheels.
I purchased these wheels:

....and had my buddy paint them black for me (to match my truck).
The smallest diameter 16" tire with a decent load rating I could find was 235/80-16 L.R. E. My local tire shop suggested Carlisle Radial Trail. They are rated for 3520lbs @ 85psi. Unfortuantly, they are about 2.5" larger in diameter, so I had to modify my fenders to get some clearance around them. The easiest solution was to remove the original mounting tabs from the fenders, mock up where the fender needed to be, and then weld the mounting tabs back on after they were trimmed to fit. The fenders ended up about 1" higher and 1/2" wider on the trailer. I found some spray paint that is a pretty close match, but luckily most of the area that needed to be painted is somewhat hidden.
I will road test it this weekend and get some better pictures......
