I have a 2002 SAN 210. Boat will start up and run for 3 seconds and cut off.

Check the lanyard. If the lanyard is connected, the emergency cut-off switch (that the lanyard attaches to) might be bad. You can take a wire and manually jump/short the connection to check. Now

Does it run and cut out exactly the same 3 seconds each time or sporadic? Lanyard/switch is possible, for me it would just not run at all when I had a bad switch/wire. It would turn over and sound like it should run but would never really run. It gave me the impression it was going run but never ran, it ended up being the switch
Could be fuel delivery as well, if it runs I personally would assume it has spark and therefor look for a fuel issue. (maybe electrical but others more experienced will chime in).
Sounds like its starving for fuel = major blockage or fuel pump failure.2006 210 TE

Just throwing out a theory but could it be that the low pressure fuel pump is working and gets it to start but the high pressure pump doesn't kick on so it doesn't get enough fuel to stay running? I would check the fuel pump breakers first and then start looking into the pump itself. It could be the lanyard safety switch but when mine died I would not get any fuel at all. The engine would turn but never fire because both pumps were being cutoff by the lanyard. It's probably worth checking the lanyard and breakers before digging into the pumps though.Shawn

If the lanyard is disconnected or bad, the engine will run as long as the key is held in the crank position.
The low pressure fuel pump does one thing. It keeps the FCC full of fuel. The FCC also has a hose that goes back to the fuel tank. No appreciable pressure builds up in the FCC.
The high pressure fuel pump is inside a filter inside the FCC. Its job is to keep the fuel rail pressurized to 39 PSI, plus or minus 3 PSI, at WOT.
This is how to check the fuel pressure on a GT-40
