!997 GT-40 Over Heating after 25 minutes.Need Ideas?

My Super Sport GT-40 over heating light comes on after 25 min in the water.I replaced the complete water pump,impeller,and water filter assembly.Still shows hot light after 25 min.The temp gauge stays around 160 even when the over heat light comes on,and never goes higher. Boat goes into it's limp back to dock mode,but the over heat light still stays on unless the boat cools off for a while. Any Idea what is causing it to over heat after 25 min drive time? Thanks

Replace the water temperature switch. The sender that controls the gauge is different than the switch that tells the ecm to go into limp mode.
