Never had an issue with previous Nautiques (97 and 05), but lately I've noticed my throttle being harder. Especially (ie first reverse off the trailer is especially bad). Im not sure if it gets easier throughout the day or if I just get used to it, but it seems like it is way more work than my previous boats- which I could accelerate, reverse, etc with barely a finger. Is there an adjustment I can make or is this something that needs to be replaced? ...and if so how involved or expensive is it?

Your throttle lever may just need a little grease.
If the grease in the cables hardens and seizes up it will feel just like bad steering cable.
I had a throttle cable break at the crimp a couple years back, and tension wise it felt the same as a normal one, but there was a hesitation between moving it and the power picking up. Then it was all on the throttle return spring to slow down. Did realize that was the problem at the time until the pin got wedged enough to seize the whole thing.

Do you mean the throttle itself, at the driver's seat? I tried greasing it at the engine (didn't notice any difference), but not up at the driver's seat. Is there a specific or separate serviceable part there?
I've had a dirtdobber nest up there once that messed with reverse, so you never know.
