I have always used the drain hose on mine. As long as the engine is warm when you do it, it comes out pretty well. I usually let mine drain for about ten minutes or so, and get about four quarts out. The filter holds about another 1/2 quart.

Hey Kenny, I use the drain hose also, but I purchased a jabsco drill pump that I attach to the end of the hose and it is the BOMB. Previously, even when oil was piping hot it would take a loooong time to all trickle out. Even then it doesn't seem like all of it drained. Now I can completely drain the oil in only a few minutes. The other benefit is the pump came with attachments that let me empty the transmission fluid.

change oil

Strongly recommand the use of drill pump,or a vaccum extractor,or u will painful to get the oil out even u heat the engine, if the oil can't out when pumping, you need to suck the oil w/mouth for prime.(drill pump)

So, after using the search option extensively, this seems to be right:

Engine: 15W-40 diesel engine oil
Transmission: Dextron III ATF
Walters V-Drive: 30W HD oil

Comments?

The CC dealer here in San Antonio uses 40W for the engine. Does it matter?

I would be sure that they use the multi-grade 15W-40 in your 2003. The Ford engines call for straight weight, but the GM engines (which you have) call for multi-grade. I'd be sure they use it so that the warranty stays valid.
