2014 Nautique 200 error code DTC 116

5.7 L, 400 Hrs, no history of temperature issues.
Received Error Code "DTC 116: ECT Higher than expected Stage 1" while ramping up to speed for a second slalom set.
Shut off engine and powered down all electrical. Restarted with no recurring error. Skied a set with no issues.
Engine temp was the typical 170F (normally 168-172F)
Inlet water strainer (clean)
Water inlet to transmission cooler (clean)
Raw water pump vanes (low hours, looks like new)
Any next recommendations? Any history of an erroneous error? Any history of ECT sensor going bad?

Have you pulled the boat out of the water to check the outside of the thru-hull fitting for weeds and leaves? That's been known to cause this code due to blockage of the water pickup.
