I recently picked up a 1989 Ski Nautique 2001. The throttle has some sort of automatic return if you let go of the handle. It slowly returns to an idle. I assume this is a safety feature, but it makes it difficult to maintain a steady speed. I would like to disable this. Any thoughts/recommendations? Thanks guys!

If you are going to do this, and I wouldn't, please make sure you wear your safety switch tether. There is a good reason the throttle is spring loaded to return to idle. One hand on the wheel, one hand on the throttle.
Invest in a good speed control unit like PerfectPass.2018 200 Team H6

Perfect pass won't work if your throttle returns to neutral. To the OP you can install a cable clamp loosely onto the throttle cable near your control. Tighten in small amounts until you get enough friction on the cable for it to stay in place. Skidim also sells a throttle cable brake, but it's a bit more than a $2 cable clamp.
A throttle that doesn't stay put is more dangerous than one that stays put, as you can get some pretty violent slowdowns if it's pulling back. While one hand on the throttle is generally good practice, it shouldn't be a necessity, nor will you find any current boat with that problem (unless the throttle is broken).
