Not sure if anyone can help but here goes are post 2007 boats engine hours stored on the rpm Gauge, Ecm or Gateway box ? are the stored on all three or just read from a single source?

Not so sure on the Nautiques but on the MasterCrafts the ECM is the master record and most accurate. The gauge and the MDC also kept track but could be reset or would revert to zero with replacement.
When a good dealer is surveying a boat for you they'll read the ECM to obtain/verify the hours on the engine. Everything else is less reliable source for hours. -
Hours are kept on ECM only. Gateway just sends it to the gauge
