Quick question. Have a 83 SN 351 PCM and temp pegs almost immediately. It has a 140 degree, can I just use one from auto parts store or have to get a OEM type??

Are you sure it is a thermostat issue and not an impeller issue?

Did you remove the RWP to replace the impeller? If so did you get it back in pointing in the right direction. Has happened to many and will not pump water to the engine reversed!

I pulled Thermostat and did the hot water check and it is ok. Saturday gonna check RWP ,although I did put new impeller and it has been working ok.
I think as some said it's the sending unit or gauge. I'm gonna take the gauge out of my 79 just to be sure.

Use an Infra-Red temperature gun. That is the best way to verify temps. You can shoot the top of the thermostat housing and the intake manifold at the water inlet to verify temps.
MAKE SURE that your raw water pump is not installed upside-down. Happens to the best of us...(the voice of experience).

Running at idle on trailer hoses from hose to thermostat housing to exhaust cold;hose going down from housing to block hot.
Does the water pump on engine do anything? Maybe that has gone bad???
Suggestions
Is the engine water pump leaking or squeaking? It's possible that the engine water pump is kaput and not circulating water throughout the engine. The raw water pump feeds water to the exhaust manifolds and to the engine water pump -- so if failing, you won't get proper cooling circulation.
