Thermostat behavior...up to 200, then down to 160 and sat fine...

2016 SAN 210, EX3 MPI 5.7L. Lake was a no wake zone today, so we just went into gear over to the Marina for ice cream. On the way back, I happened to watch the temps. About 1/4 mile out from marina, started watching temps. Slow crawl up to about 200 degrees, then it went back to 160 and sat nice.

Is this normal behavior? Does this mean the thermostat is shot (i.e. it should cool at 160 and keep it there)?

Have you repacked the impeller lately? Could be failing, or could even be a lose belt... Nothing blocking the intake?
