Just bought the boat, 1987 Dominique, and it wants to run 190ish give or take at times. If this is not correct please inform me of what I should be looking for or replacing. Thanks

The standard PCM thermostat for a SBF 351W carby engine is 143 degrees. Keep in mind that a bad sending unit, gauge and/or wiring can affect what you THINK the temperature is. Assuming that everything is working properly, you should be in the 140 to 150 degree range.
With that being said, I ran a 160 degree thermostat on my high-output Ford 351W for many years. No problemo.

190 sounds high. I would expect to see between 160 and 170.
Check the impeller first. Make sure it is in perfect condition. If not, replace it. It is a cheap part, but very important. If that's not the issue, check the thermostat, and then start checking for air leaks throughout the cooling system.
