I got my '04 211 dewinterized about 10 (engine) hours ago. They replaced the impller when they were working on it. However, my lake has had a lot of rain in the past month. We went from 12 feet low to even or more. I've heard that if you have a lot of rain it stirs up the dirt and this is bad for the impeller. About three days ago i was out and the boat was running weird. When i had the perfect pass on, it would slow down then speed up over and over again. And then, when i would press down on the throttle, it wouldnt stick but it would become more difficult to make the boat go faster. I've never changed the impeller so i dont want to take it apart and not be able to put it back together. And im not even sure this is the problem. Does anyone know whats going on here. Will

Sounds more like throttle/linkage issues. Your impeller should be able to handle stirred up water no problem and any malfunction in the imperller should not affect your throttle, pp, or linkage. I would look at the PP first and make sure it is functioning properly and that nothing is stiff. From there check your throttle body and make sure it is moving freely and not stiff. If none of those you might have a stiff throttle cable or throttle control.
Another thought is checking your o2 sensor and rev limiter. On my '84 2001 which is running 320hp it is easy to over rev with the prop that's on there. At which point the rev limiter tells the engine to cut fuel and surging in the speed commences. If you try to lay down the hammer to get back to speed it does not respond and you have to allow everything to reset. A bad o2 sensor can also create hesitation when accelerating and will screw with the air/fuel mixture in turn causing your engine to not run smoothly in many cases. Not the impeller, it won't cause it to run differently, just overheat if malfunctioning.
Squam, no O2 sensors on these motors, so it's not that either.
My first guess is PP linkage, turn it off, wind the cable and see if the throttle responds as expected. If not, then it's not the PP.
Next guess would be fuel delivery issues.
