Sorry for the long delay in responding, my life has been CRAZY since our cruise in July.
We sailed on the Liberty of the Seas and had a really good time. Here are my thoughts right now, if you have any questions, please ask.
First, I understand the idea of not wanting to take fancy clothes for dinner but I would suggest taking at least one set so you can take your wife to dinner at least one night. The first night is informal so definitely do that one.
This is what my family did:
St. Croix - We took the excursion to snorkel Buck Island. It was an enjoyable time, snorkeling was OK for me, but appropriate for my inexperience family.
St. Maarten - Here we rented a car and drove around the island. One of the main things I wanted to do was to visit Maho beach and watch the air traffic. Here is a photo I found on line…
We also stopped and swam at Mullet Bay which was nice. After all of that we ate at Karacters. This was a beach restaurant (based out of an old bus) and was wonderful…everyone in our family loved it! It was pretty darn hard to find but was well worth the effort. I highly recommend it.
Antigua – We took the Zip Line and Challenge Excursion. It was a fun activity, we all enjoyed it but I could take it or leave it.
St. Lucia – Ocean Tour to see the Pitotons. This was on a slow catamaran sailboat operating under power. It was a very relaxing trip and, again, we all had fun. If you do this, I recommend getting a spot in the front of the boat on the net…by far the best place to ride.
Barbados – Here we rented a car again to explore on our own…DON’T do this. The maps were terrible so navigation was difficult and we really didn’t see the things we wanted. I think you can hire a car and driver…that is what I would do if I were doing it again…and I am the kind of person that prefers being on his own. Then again, on vacation, it is nice to relax and navigation with their maps and road signs was not at all relaxing.

Cruise stop suggestions
Well, I'm back! Had an issue free cruise! As for the excursions, we did two ship excursions that gave us a taste of the local life and the other three stops we rented a taxi. I know there is danger in that, but provided they are legit, this was the cheapest and best way to see the island. On St Croix, we got to see a pig drink a beer (non-alcoholic). On Martinique we set the timetable at each stop and were able to do a lot of pull overs for pictures. Best thing is if you just want to se the island ask for an Island Tour and then if a specific request comes up they can deviate.
And I'm VERY happy we didn't try to rent a car. Most of the roads on the islands aren't marked!

yep. That one is stuck in Fla I believe. I tell ya what, invest in hand sanitizer. I hate the stuff (prefer to actually wash my hands) but they make you use it at every meal and before boarding from the islands.
