whats a good product for wiring quick disconnect that can handle three speakers per side of the tower

Mikeski did an install where he can un plug the wires at the tower - If you search his name it was not that long ago (couple of weeks maybe) that he posted.

Radio Shack has a two wire plug similar to the ones used on battery tender chargers. You would need a couple but it's just a suggestion. RC car places have some called sermo connectors that you can rig to only fit on way so 4 to 4 would be an easy fit.

You could do speakon connectors, which have a nice positive connection that works well, but the females are a little big, maybe too big to put on a tower. (There's a joke in there somewhere, right?... )
