I was wondering if anyone has installed subwoofers in the back lockers of their boats beside the engine instead of the stock location under the glove box? If so how do they sound and would you do it again?

What you have described works acceptably at rest, if you crack the hatches, and you have very large woofers/enclosures with excessive power.
There are challenges when underway. It's much like a sub in the trunk of an auto convertible. You can hear it much better when parked but you lose a ton of output when in motion. It's also like listening to a sub from the next door apartment through the walls. You hear the jungle rumble but not much that can be construed as musical bass tonal construction. Zip midbass and nada transient attack. Keep in mind that the rear bulkhead and hatches are specifically designed to attenuate the engine sound level so this has the same impact on the subwoofer. It's an easy 6 to 10 dB loss and that means the amplifier and woofers have to work six to ten times harder to produce the same output. And with any sub system, the one that works the most conservatively always sounds the best.
Some of your level of satisfaction would be dependent on the type of music you listen to. With a steady diet of Rap, Hip Hop and Techno, that is primarily synthesized bass, then it's not as critical. If you listen to music with more string bass content then you won't be happy with the soggy and indiscriminant bass.

Liquid, consider putting a small vented sub enclosure just forward of where the trash can sits.... And widening/enlarging the opening for the trash can into a permanent vent to allow the bass direct access into the cockpit.
i have mine done like this, a 12" on a true 1500w, in a small slot ported enclosure. I would give it an A- .... But I am a bass and audio snot as far as output. 90% of folks would be satisfied with this setup.
I may this winter redo the factory sub to a quality IB sub done correctly.2019 G23 450
